Bacon & Egg Salad

Ingredients:
8 eggs 1 cup mayonnaise
½ pound bacon
1 cup hot pepper cheese
3 tablespoons chives
4 thin radishes – sliced thin
1 head lettuce – torn fine for salad
1 avocado – cubed

How to Prepare:

  1. Boil the eggs, until hard and dice them.
  2. Fry the bacon and crumble it.
  3. Mix all ingredients in a bowl.

NOTES:
Carbs for avocado based on 14.85 for 1 3/8 cup – adjust accordingly.
Carbs for lettuce base on 2 for 1 cup – adjust accordingly Carbs for hot pepper cheese not included in above total – adjust accordingly



Bacon Cheeseburger Salad

Ingredients:
3 ounces lean ground beef crumbled,cooked and drained
4 slices bacon – cooked crisp,drained and crumbled
1 cup chopped lettuce
1/8 cup chopped onion1/2 medium tomato – chopped
1 tablespoon mayonnaise ¼ cup cheddar cheese – (or 1 once)

How to Prepare:

  1. Stir mayo into lettuce,onion and tomato until evenly coated.
  2. Toss in beef,bacon and cheese.


A Plan To Florida

Bring my kids to Disneyland is one of my plan, because I read many Disney News, and found that Disney really a dream place for whole family and I’m sure my kids will love the Disneyland. Disneyland in the Orlando Florida will be our first choice. Since my sister went there before, she is familiar with the place. So I’ll happy to have a travel guide there. Hubby and me are working hard on earning money to spend for the trip.

We are planning for 4 days 3 night trip. But sister advice to stay at Florida more then a week, because there just too many place to visit. Besides Disneyland, she say will bring us to Atlantic Ocean to enjoy beautiful sunny beach and must go Miami, the sunny southern city in the sunny state of Florida. I wish to stay at the Orlando Villas which provide good facilities, so that I can have stay like the comfort at my own home.



Crispy Snapper and Shrimp Balls

Ingredients:
1 pound red snapper — fillets
1 pound shrimp — peeled and cleaned
1/2 cup finely chopped green onions
1 clove garlic
1/2 cup protein powder — plain
flavor/may need more or less
1/4 cup heavy cream
1 large egg
1/2 teaspoon salt and pepper — each oil for frying

How to Prepare:

  1. In a food processor, finely chop everything except the oil and protein powder.
  2. Stir in powder until the mixture can be formed into firm balls(your choice on size- large marble to golf ball size).
  3. Heat oil to 350 in a deep fryer. Fry balls for approximately 5-6 minutes or until nicely browned. Drain well on paper towels.

Oriental type dipping sauce:
2 tablespoons dijon mustard,
1/4 cup mayonnaise,
2 tablespoons soy sauce,
1 tsp hot pepper sauce(more or
less to taste).



Crab and Salmon Cakes

Ingredients:
6 ounces salmon fillet — skinned, cut into strips
1/4 cup heavy cream
1 teaspoon salt
1/4 teaspoon pepper
1 pound lump crabmeat1/4 cup tomatoes — seeded, finely diced -or
rotel tomatoes with green chilis
2 tablespoons fresh chives — chopped
2 tablespoons fresh parsley — chopped
1 tablespoon olive oil

How to Prepare:

  1. In food processor, pulse salmon strips until finely chopped.
  2. With machine running, slowly add cream, salt, and pepper; process until smooth.
  3. Transfer to a medium bowl; stir in crabmeat, tomato, chives, and parsley until well blended.
  4. Shape and flatten into 8 3-inch round cakes.
  5. In large non-stick skillet, heat oil over medium-high heat.

Fry 2-4 minutes per side to brown. Drain on paper towel.

Compare Credit Cards Features

Sometime, I felt that finding credit card information is kind of hassle. I used to concern about my personal financial, so I won’t really apply something that I’m not clear about. Especially for those credit card or loan that might leads me to bad credit. I usually will check and compare credit cards features, terms and conditions before make my decision on which to apply.

Basic Won Ton

10 Chinese mushrooms, small
1 tsp Salt
1/4 lb Prawns
1/2 tsp Sugar
5 Fresh water chestnuts (OR 7- canned ones)
1 tsp Thin soy Sauce
1 tsp Oyster Sauce
1/2 lb Ground Pork
Dash of pepper
1 Green onion, finely chopped 1
1/4 tbsp Cornstarch
1 pk Wonton skins
1 Egg

How To Cook :

  1. Boil Chinese mushrooms for 10 minutes, rinse, squeeze dry, cut off, and discard stems; then, chop into very small pieces. Shell, devein and wash prawns.
  2. Chop into very small pieces Peel and crush water chestnuts with the flat side of the cleaver. If you don’t have a cleaver, chop the water chestnuts into very fine pieces.
  3. Combine mushrooms, prawns, water chestnuts, Pork and green onion. Add all other
    ingredients and mix well.
  4. 1 tsp of filling is used for each won ton.
  5. With one corner of the wonton skin toward you, place 1 tsp of filling about an inch from the corner.
  6. Fold one corner to cover the filling. Fold once more…about 3/4 inch.
  7. Turn the won ton so that the triangle is toward you. Dampen the left corner with a little water.
  8. Swing the right corner away from you and place it on top of the dampened left corner.
  9. As you make this fold, simultaneously pull the filling toward you with your middle finger, you
    should finish with a little “hat-like” effect.


Bok Choy With White Pork

1/4 lb Boneless Pork shoulder
1/4 c Chicken stock
1 lb Bok choy stalks
1/2 tsp Sugar
1/2 tsp Minced Garlic
1 ts Dry sherry
1/2 tsp Minced fresh ginger
Cornstarch paste
3 tbsp Peanut oil
1 tsp MSG (opt)
1/4 tsp Salt

How To Cook :

  1. Slice Pork against the Grain into thin strips about 2″ by 1/2″.
  2. Separate outer fleshy stalks from center flower stalk of bok choy. Use center
    stalk in another stir-fry dish or in Soup. Wash outer stalks, and diagonally slice into 3″ pieces.
  3. The meatier ends of the stalks should be sliced a little thinner. Swirl oil around in very Hot wok.
  4. When oil begins to smoke, add Pork and stir-fry until Meat is seared (about 1 minute).
  5. Add bok choy, Garlic and ginger. Stir-fry until green leaves are bright and shriveled, stirring and tossing constantly so stalks won’t burn.
  6. Add salt, stock, Sugar and dry sherry.
  7. When liquid begins to boil, cover wok and steam for 30 seconds or less on high heat, until stalks are tender but still crisp.
  8. Push ingredients up side of wok; dribble cornstarch paste into liquid and stir to make a light Sauce.
  9. Recombine and add MSG if desired.
