Summer Squash Casserole

Ingredients:
4 medium yellow squash — sliced
1/4 cup sour cream
1 tablespoon butter
1 cup grated cheddar cheese — divided
1 teaspoon paprika
1 egg yolk — beaten
1 tablespoon chives — chopped
4 slices bacon — fried crisp
1/2 teaspoon salt

How to Prepare:

  1. Simmer squash, covered, in 1/4 c. water until tender. Drain well.
  2. In a saucepan,combine sour cream,butter,1/2 c.cheese,salt and paprika.
  3. Stir over low heat until cheese is melted.
  4. Remove from heat and add egg yolk, chives,and bacon. Add squash.
  5. Place in buttered dish and top with remaining cheese.
  6. Bake at 350 degrees for 30-35 minutes.
