Strawberry With Chocolate

My daughter loves strawberry very much. She could finish half kilo strawberry within a hour time. I do not know why she loves strawberry. I seldom buy strawberry because I am not interest in sour fruit. Well, of course, there is different story if I could find sweet strawberry with cheaper price. Strawberry is selling expensive here and most of it taste sour too. Not what I am want.

Last week, my daughter keep saying want to eat strawberry again, so i have no choice to buy those sour and expensive strawberry. Lucky, I found an alternative way to enjoy the strawberry now. Topping with chocolate sauce taste good. :lol:



Homemade Red Bean Soup

Today is Sunday, as usually my mother cooked my favorite dessert for us. She loves to prepare dessert on weekend and waiting for me to bring the children come back. I know she loves SQ & Kiki a lot, so she just loves to cook something they likes. Opps… But today dessert is my favorite not their favorite.

Look! Today dessert is Red Bean Soup.



Crispy Roti Tissue

This is a must order food whenever I go to mama stall. Sometimes, I will order 2 or 3 pieces just to share with my friend and our children. Children sure like it because its crispy and sweet.SQ & Kiki like it too.

Roti tissue is very thin type of roti canai. A little bit sugar and butter make it taste great. Remember to order it if you want to have a nice snack at Mama Stall.



Ice Cream In Cup

I feel like going to fall in sick soon. I am having sore throat now and seem like the flu is on the way already. I think I ate too much of heat food in last two weeks. There are so much of CNY food, I almost ate every day non-stop. Fried shrimp cracker, bake dessert, fired chicken etc. I am heating now!

I just finished two cup of ice cream while watching the TV program. I feel much better now as my throat are not so dried and sore now. I hope everything will be help on tomorrow. Or else I will take more ice cream later.


No matter is with or without having sore throat, I wish I have more chance enjoy ice cream services like those picture here. They just look very yummy!



Good Fudgie Chocolate Candy

Ingredients:
20 pkts “Splenda”
1 pkg “cook to serve” sugar-free chocolate pudding
1 oz butter or margerine
1 can evaporated milk
1 pkg {8 ozs} unsweetened baking chocolate, any brand

How to Prepare:

  1. Melt baking chocolate in Microwave {about 7 mins @ 40% power} in medium sized bowl.
  2. Combine other ingredients in saucepan and cook according to pudding directions.
  3. Pour cooked pudding into melted chocolate, mix thoroughly, then pour into glass pie plate.
  4. Refrigerate. Gets really firm. Makes good dark chocolate candy!


Macadamia Nut Joys

Ingredients:
3 Ozs cream cheese softened
1/2 Cup unsweetened shredded Coconut
1-2 Tablespoons of Heavy Cream
1 Teaspoon Vanilla Extract
4-5 Packets of Splenda
12 Macadamia nuts For chocolate coating
2-Low Carb Dark Chocolate bars
1-Tablespoon of Heavy Cream

How to Prepare:

  1. Using tin foil, make a little tray approx the size of 3 x 6 and give it a light coating of Pam or something similar.
  2. Break up chocolate and add the cream and microwave for one min and stir to make sure its all melted.
  3. Take half of the melted choc and spread it on the bottom of the foil tray evenly.
  4. Place in freezer to get hard for about 10 minutes.
  5. While waiting, mix the softened cream cheese, coconut extract and Splenda and enough of the cream to make a workable dough.
  6. Take foil tray out and spread the “dough” mixture evenly over the top and place the
  7. Macadamia evenly so you can get 6 bars with 2 nuts each on them.
  8. Take remaining chocolate and spread evenly over the top.
  9. Place back into the freezer for about 2 hours and then cut into 6 equal portions.
  10. Store in freezer. Just take and eat directly from the freezer!


Low Carb Chocolate Treats

Ingredients:
1 8oz pkg cream cheese softened
1 large box sugar free jello
1 oz square unsweetened chocolate
1 tbsp heavy cream
1 pkg splenda
1 tbsp butter

How to Prepare:

  1. Mix first two ingredients together in a mixer…Mix well.
  2. Form into 24 balls.
  3. chill for 1/2 hourMelt together chocolate, cream, butter and splenda..
  4. Dip cream cheese balls in chocolate.
  5. Refrigerate for another 20 minutes.


Crepes and Cream

Ingredients:
6 Ready made Crepes
Redi-Whip Cream Cheese
Nuts (optional)

How to Prepare:

  1. Spread cream cheese over a Crepe and top with Redi-Whip and nuts if desired.

Ingredients:
1 8 oz package of cream cheese
1 cup slice almonds
1 1/2 tsps of Cinnamon
5 Splenda packets

How to Prepare:

  1. Lay almonds slices on a cookie sheet and toast in a 350 degree oven for 5-7 mins.
  2. Remove and let cool. combine almonds, cinnamon and splenda in a bowl and mix well.
  3. Using a melon baller or small spoon take a glob of cream cheese and roll it in the dry mix, pressing the almonds in until they stick and glob is completely covered…
  4. store in refrigerator in a tight container or covered in plastic wrap..
  5. 1 pack of cheese makes about 10-15 snacks depending on how big you make em..
  6. You could also make a large nut log for the holidays by adding the sweeten and cinnamon to the cream cheese and just covering the whole lump in the nuts and then just slice it to serve it!


Cottage Pie

Ingredients:
1/2 pound ground beef — or steak
1 teaspoon onion flakes
1/2 teaspoon garlic powder
1 teaspoon beef gravy powder
salt and pepper — to taste

Topping:
3 medium cauliflower flowerets
1 stick butter
1/2 cup cheddar cheese — grated
salt and pepper — to taste

How to Prepare:

  1. Cook beef, garlic powder, and onion flakes in 1 tsp oil until meat is all brown.
  2. Add 1 cup boiling water to the beef gravy powder and stir into the meat mixture.
  3. Add salt/pepper as desired. Meanwhile, cook the cauliflower in boiling wate until very soft.
  4. Mash well with a potato masher, or whizz in a food blender until smooth.
  5. Mix in the butter and cheese and salt/pepper.
  6. Put the meat mixture into a small pie dish and top with the cauliflower mash.
  7. Bake for about 20 minutes at 350F.
  8. Add a little more grated cheese to the top and brown under a broiler.


Chocolate Praline Bar

Ingredients:
1 ounce unsweetened baking chocolate — or semisweet
2 ounces Unsalted Butter
4 tablespoons Peanut Butter
1 tablespoon heavy cream — to taste, optional
Splenda to taste (optional if using semisweetened)
4 ounces nuts — ground or finely chopped in grinder

How to Prepare:

Melt chocolate in Microwave and stir, add butter and PB, melt ans stir to combine.

Heat only util just melted.

Add cream and Splenda if using. Grind nuts and stir in.

Spread into large thin slab on baking paper on a tray and freeze for a couple of hours.

Cut into small squares and store in bag or box..

I get at least 40 squares less than 0.5g each ! They are very rich so I just find 1 or 2 a night are enough to satisfy my sweet craving.

I eat them straight from the freezer, they keep their Îcrispâ that way.
